Starting with the one you were already thinking.
You can, and for a side project that may be enough. Where it falls down is everything after the logo: whether it still reads at 40 pixels, whether it works in one colour on an invoice, whether it looks like three competitors who used the same prompt, and whether you have a vector file at all. The mark is the easy part. The system around it is the work.
Two to three rounds are included and are almost always sufficient once the direction is agreed. What we avoid is endless small changes with no clear goal, which is exactly why the real time goes into discovery first.
Often that is the better move, and we will say so. If your logo already carries recognition, we fix the spacing, rebuild it as clean vector and correct the colour system rather than discarding equity you have already paid for.
UX is how it works: what the user is trying to do and how quickly they can do it. UI is how it looks and feels while they do it. A beautiful interface over a confusing flow still fails, which is why the two are designed together rather than in sequence.
